16 oz baby Bella mushrooms

1-2 yellow squash

1-2 medium size zucchini

2 carrots

2 red peppers

½ yellow onion

3 minced garlic cloves

14 oz chickpeas

14 oz tomato paste

1 cup red wine of any choice

½ tsp smoked paprika

½ tsp cumin

1 spring fresh thyme

Salt to taste and parsley to garnish

Your base can be veggie stock. Remember to add water and olive oil if needed.


Mix any veggies you want. My suggestion is something that has a medium-firm texture. Example: zucchini, carrots, mushrooms. Peppers are the essence of goulash. Add paprika, onion, red wine, and something smoky for flavor like liquid smoke or cumin. Garbanzo beans will also add to the flavor. Tomato paste is the last thing you'll want to add. Cook everything together, starting with the vegetables, hardest to the softest. Try your best not to overcook it.
